• Baked Brie & Duck

    We are in France for the summer! My sister wanted to try baked Brie so I cooked it with duck (my favorite meat). The oven was being tricky so sadly my duck was a little over cooked and not medium rare, but still very tender to bite into!

  • More Sourdough Content

    Leaven that rested overnight
    Add 300g water to the Leaven and then mix till the leaven has dissolved into the water
    Add 310g bread flour and 80g whole wheat flour
    Mix in circular motion and then rest for 20 minutes!
    After 20 minutes sprinkle 8g of salt on dough and knead till combined
    Now let it rest for 3-4 hours while folding it every 30 minutes
    Dough after 3 1/2 hours I was going to scrape it out but forgot to take a photo so it looks a little disheveled lol
    Now flour your surface and scrape the dough out seam side up
    Fold it from right top corner and then do the left corner and repeat with the bottom
    Rest for 10-30 mins and then I forgot to take pics but fold it once again on a floured surface and put in bannetons and they’ll stay in the fridge for 8-24 hours
    Bread after 18 hours in the fridge I took it out and coated it with some sesame seeds

    Bread after resting for required time
    Split into two boules
    Put them in bowls under a towel dusted with whole wheat flour
    Score them & bake after letting Dutch oven heat up at 500 in the oven
    First loaf/boule done!
    Second loaf complete too!
  • Sourdough

    Currently working with sourdough for the first time! It’s honestly thrilling and I’m excited to develop some break making skills!!

    This is the starter it’s like your baby you have to feed it throughout the week and take good care of it! 💗😇

    Right now I’m making a French Country Bread, so far it’s rising really nicely. I had to knead it by hand a few times and it shall rest for 12 hours or longer since it will be 12am by the time 12 hours has passed by ☹️.
